Rick progressed to catering college after he finished full time education. He started his career as a commis chef at Valentino's in Ripon. Subsequently, he worked his way up the hospitality ladder at The Old Deanery in Ripon where, over the next three years, he progressed from Reception to Restaurant Supervisor and then to Deputy Manager. At this point he furthered his knowledge of ales by working for a micro brewery in the Dales.
Rick purchased the lease of The Water Rat in February 2007 and following a major setback of the June, 2007 flood, he has seen it grow from strength to strength. He also runs an event company and works very closely with the local education authorities.
Believing that the catering industry has given him a great deal, Rick aims to give something back and so helps local schools and colleges via demonstrations and creating enthusiasm with local students for both the catering industry and entrepreneurialism.
